May 21th - Chickpea Croquettes with Spinach, Tomatoes and Potatoes
This was the dinner for my (not vegan) family and I was surprised that everyone seemed to like it (since my younger brother really isn’t that keen on spinach). Not everyone has to go vegan or vegeterian, even one yummy plant-based dish a week makes a difference.
